ColumnIs tea the new coffee?

My father has always had a tea obsession.

He is known for brewing batches for way too long – above and beyond the recommended steeping time, resulting in the kind of strong, black tea that is on the verge of undrinkable. My mother and I sit on the couch, taking each sip with a slight cringe and rolling our eyes at each other while my father sits in his reading chair, oblivious to the fact that anyone could have a lower tolerance for that kind of tea strength. Just as I can’t go a day without good coffee, my father can’t be left without a substantial pot of tea. He has special mugs for various blends and there’s an entire shelf above our kitchen windows that holds an assortment of metallic tea tins, all full of loose leaf.

As a child, on weekend trips to the city we would always stop at his favorite tea house so he could buy tea in bulk. As a semi-bored 9-year-old, I explored the attached book store wondering why they couldn’t just serve hot chocolate; I wasn’t ready for a dozen types of Oolong. But somewhere along the line, these jaunts created an appreciation for good tea in me, preferably black.

Tea culture is different from that of coffee, or any other warm drink for that matter. I am reminded of this by the quote that hangs by my father’s reading chair:

To the right, books; to the left, a tea-cup. In front of me, the fireplace; behind me, the post. There is no greater happiness than this. – Teiga

Coffee might be our fuel for the day, but tea is the calming element that we need to unwind with.

The United States isn’t high on the list of global tea drinkers – a whole 0.2 kilograms per person annually, compared to Britain’s 2.3 – and the drink has nothing on its caffeinated counterpart. In 2010 the tea industry in the U.S. accounted for $7.7 billion, whereas coffee stood at $47.5 billion.

But just as you can buy 12 ounce bags of coffee beans for $60, premium cups of tea have been known to go for double digits, and specialty tea culture is on the rise. Just a couple of weeks ago, I found myself nursing a concoction of Bourbon and Lapsang Souchong; I phoned my father immediately upon exiting the bar. If tea that tastes like a campfire is making its way into strong whiskey drinks, we should take notice.

Is tea the new foodie drink of choice? Although we’ve been drinking it for over 5,000 years, tea has taken a new turn in the food world. Rooibos has been deemed the “new pomegranate juice,” there are whole online communities devoted to discussing the drink, antioxidants have never had so much positive marketing, design bloggers are making their own tea bags, and don’t even get me started on the matcha craze. Sidenote: for the best matcha latte, check out The Fix in Nevada City.

Tea is striking it big time, and there’s a personality for every cup of it, just like there is for coffee. If double Americanos define the hip and edgy crowd, so do specialty black teas and the aforementioned Rooibos, while the fruitier blends attract a similar crowd as the double foam, no sugar, mocha something or other. Think about the first impression you’re making next time you share what’s in your reusable tea mug with a built in infuser. Not that I would ever pass foodie judgement on anyone.

And unlike those pumpkin spiced lattes that you guiltily love yet can’t seem to find the time to make at home, in turn forcing you to keep frequenting that coffee shop, getting creative with tea recipes is as easy as throwing some spices together. Start easy with a recipe like Coconut Mango, and if you’re really feeling up for it, whip up a few batches of Chai. A homemade tea blend not only says you’re on the cutting edge of foodie-dom, but you’ll end up with a nice hostess present to give at the next dinner party. So much more creative than that bottle of wine you were debating on sassing up with a fun ribbon.

Tea just might be finding its foodie stride, and in our overworked, stressed out culture, might be just the calming agent we need. I think Lao-Tzu said it best:

Drinking tea, eating rice, passing time as it comes; looking down at the stream, looking up at the mountains.

That’s a mindset we could all drink to.

Editor’s note: This is the latest installment of Anna Brones’s weekly column at EcoSalon, Foodie Underground, discovering what’s new and different in the underground food movement, from supper clubs to mini markets to the culinary avant garde.

Stayed home on Black Friday? Good. Here are some gifts you can buy for the comfort of your own home.

Our favorite eco-retailer, VivaTerra, is having a fantastic holiday sale, just in time for dressing your house up in seasonal, original fun. These five gems are all 50% off, so you’re within your rights to buy two – one as a gift and, ahem (whisper), one for yourself.

With bijou desserts still all the rage, this branch pedestal server ($87) will display your mini-puds to dramatic effect. Designed as a little tree, it has two levels – one large and one small – with a butterfly delicately perched on the edge of the upper tray. Besides, we’ve been lusting after it for a while.

Finding a unique holder for those table essentials is always a challenge, which is why we love this chirpy bird salt and pepper set ($12). Their shape is smooth and tactile, with a tiny beak and graceful body – they dispense through a discreet opening on their heads. We like their subtle color distinction.

We’re always on the lookout for new ways to present cheese. This ingenious puzzle board ($29) will make your fromage serving both fun and fabulous.

Having limited kitchen space myself, an all-in-one tower which performs no less than five functions is a winner. This minimalist white ceramic tea tower ($27) features storage and presentation for your teapot, tea cup, saucer, sugar and cream.

These glass numbers are designed to echo familiar shapes: the carton ($12) for your cream and the sack ($14) for your sugar. The Milk carton creamer and sugar sack: perfect for the surrealist tea party.

“Only women bleed,” crones a 1970s ballad by Alice Cooper. To which we should say, “Yes. Yes we do.” Call it Aunt Flo, the red tide, the curse, or riding the crimson wave, your period is that time of the month when you’re dealing with cramps that pain and hormones that swing. Sure, maybe there are some women out there who enjoy this completely natural monthly event. If she’d like to identify herself, I’d like to her to show me where Santa Claus lives with the Easter Bunny, next door to the Tooth Fairy of course.

Yes, some sarcasm. Maybe I’m PMS-ing. Or maybe most of us think of our periods via John Hughes’ Sixteen Candles, when Ginny Baker spends most of the film cranky and then completely out of her mind (via painkillers) at her wedding. And all because of her period. Bad menstrual cramps are caused by the normal contraction of the uterus, the result of prostaglandins in the body.

So yes, Aunt Flo isn’t a welcome guest. But there are some easy ways to combat the crimson tide.

Walk it off. Some medical professionals suggest that those who exercise several times a week are less likely to experience bad cramps. Even a quick walk can help ease discomfort, as anything that releases endorphins will help you manage pain.

Hit the heating pad. Heat can help with inflammation and reduce the buildup of fluid in tissues. It also eases muscle spasms. Experts urge us to lie on our stomachs while applying the heat or in the most comfortable position possible.

Sleep. Need an excuse to nap? No time like the painful present. It will take your mind off the pain and let you get some much needed relaxation.

Take a hot bath. This will help you relax your abdomen muscles and, more importantly, soothe your mind. For extra effort, bring out the candles and the scented bath oil. Erbaviva makes a great blend with organic and wild-crafted essential oils.

Consider vitamins and supplements. As Dr. Woodson Merrell of Beth Israel Medical Center told ABC News, consider “taking Evening Primrose Oil in a 500-1000 mg dose once a day in capsule form (available at vitamin shops and health food stores) along with 200-400 mg of magnesium and 100-200 mg of vitamin B6 for four to seven days before the onset of your period.” Be sure to consult a medical professional if you are already on certain medications or experience severe periods.

Drink a cup of tea. Consider a cup of green tea. According to experts, green tea is high in phenolics, which can inhibit cramps. Don’t want the caffeine? Think about a cup of relaxing chamomile tea. Better yet, drink it while you’re in the bath.

Go have sex. Yes, sex on your period not everyone’s cup of tea. But an orgasm will release endorphins and oxytocin in the body that will block pain receptors. You will feel better. And remember, not everyone needs a partner to have an orgasm.

Simply put, your brain likes to eat. And it likes powerful fuel: quality fats, antioxidants, and small, steady amounts of the best carbs.

On a deadline? Need to rally? Avoid the soda, vending machine snacks and tempting Starbucks pastries and go for these powerful brain boosters instead. The path to a bigger, better brain is loaded with Omega-3 fats, antioxidants, and fiber. Give your brain a kick start: eat the following foods on a daily or weekly basis for results you will notice.

20 foods that will supercharge your brain:

1. Avocado

Start each day with a mix of high-quality protein and beneficial fats to build the foundation for an energized day. Avocado with scrambled eggs provides both, and the monounsaturated fat helps blood circulate better, which is essential for optimal brain function. Worst alternative: a trans-fat-filled, sugar-laden cream cheese Danish.

Green it: you don’t need to buy an organic avocado – conventional is fine. But make sure your supplementary protein is free range, cage free, or organic.

2. Blueberries

These delicious berries are one of the best foods for you, period, but they’re very good for your brain as well. Since they’re high in fiber and low on the glycemic index, they are safe for diabetics and they do not spike blood sugar. Blueberries are possibly the best brain food on earth: they have been linked to reduced risk for Alzheimer’s, shown to improve learning ability and motor skills in rats, and they are one of the most powerful anti-stress foods you can eat. Avoid: dried, sweetened blueberries.

Green it: buy local and organic, and be mindful of seasonality. When blueberries are out of season, opt for cranberries, grapes, goji berries, blackberries or cherries to get your brain boost.

3. Wild Salmon

Omega-3 fatty acids are essential for your brain. These beneficial fats are linked to improved cognition and alertness, reduced risk of degenerative mental disease (such as dementia), improved memory, improved mood, and reduced depression, anxiety and hyperactivity. Wild salmon is a premium source, but we’ll highlight a few other sources on this list for vegetarians and people who just don’t like salmon. Avoid farmed (read: sea lice infested) salmon.

Green it: the California salmon stock is threatened, so choose wild Alaskan salmon only, and eat small portions no more than twice a week.

4. Nuts

Nuts contain protein, high amounts of fiber, and they are rich in beneficial fats. For getting an immediate energy boost that won’t turn into a spike later, you can’t do better than nuts. The complex carbs will perk you up while the fat and protein will sustain you. Nuts also contain plenty of vitamin E, which is essential to cognitive function. You don’t have to eat raw, plain, unsalted nuts, but do avoid the ones with a lot of sweetening or seasoning blends. Filberts, hazelnuts, cashews, and walnuts are great choices, with almonds being the king of nuts.

For those avoiding carbs, macadamia nuts are much higher in fat than most nuts. By the way, peanuts just aren’t ideal. Aside from the fact that many people are allergic, peanuts have less healthy fat than many other types of nuts…maybe that’s because peanuts are not actually a nut! They’re still much better than a candy bar, however.

Green it: try to choose organic, raw nuts, and if you can’t get those, at least avoid the tins of heavily-seasoned, preservative-laden nuts that may have taken many food miles to get to your mouth.

5. Seeds

Try sunflower seeds, sesame seeds, flax seed, and tahini (a tangy, nutty sesame butter that tastes great in replacement of mayo and salad dressing). Seeds contain a lot of protein, beneficial fat, and vitamin E, as well as stress-fighting antioxidants and important brain-boosting minerals like magnesium.

Green it: Again, just look for organic and try to avoid the highly-seasoned, processed options. In general, things like fruits, vegetables, seeds and nuts are pretty low-impact, environmentally speaking, in comparison to meats and cheeses.

6. Coffee

Thine eyes do not deceive (even if you are in the midst of a sugar crash). Coffee is good for your brain. Did you know coffee actually contains fiber? That’s going to help your cardiovascular system. Coffee also exerts some noted benefit to your brain in addition to providing you with a detectable energy boost.

The trick is not to have more than a few cups. But you can safely enjoy 2-4 cups daily – we are talking about supercharging here. Just please don’t go ruining a good thing by loading it up with sugar! Espresso beans are actually a phenomenally healthy snack, by the way.

Green it: brew yourself some fair-trade organic coffee to benefit both the planet and the workers who grow your beans. Use a thermos instead of a throwaway cup.

7. Oatmeal

Nature’s scrub brush is one of the best foods for cardiovascular health, which translates to brain health. Additionally, oatmeal is packed with fiber, a reasonable amount of protein, and even a small amount of Omega-3′s. It’s a good grain that will sustain you throughout the morning so you aren’t prone to irritability or an energy crash.

Green it: the healthiest oatmeal is the real, steel-cut deal. Steer clear of those little microwavable packets that are loaded with sugar. All that packaging isn’t very green.

8. Beans

One more for carb-lovers. (The brain uses about 20% of your carbohydrate intake and it likes a consistent supply.) Beans are truly an amazing food that is sadly overlooked. They’re humble, but very smart. Not only are they loaded with fiber, vitamins, minerals and protein, they’re ridiculously cheap. An entire bag of beans usually costs only a few dollars and will provide many meals. Beans provide a steady, slow release of glucose to your brain – which means energy all day without the sugar crash. Don’t go eating a whole platter of frijoles, though – just 1/4 of a cup is fine.

Green it: look for heirloom beans that are raised sustainably, like those from Rancho Gordo.

9. Pomegranate

Opt for the fruit over the juice so you get more fiber. Pomegranates contain blueberry-like levels of antioxidants, which are essential for a healthy brain. Your brain is the first organ to feel the effects of stress, so anything you can do to offset stress is a smart choice.

Green it: pomegranates are seasonal and not generally local for most of us, so enjoy sparingly and rely on other berries like acai, grapes and cherries when you can’t get this fruit.

10. Brown Rice

Brown rice is a low-glycemic complex carbohydrate that is excellent for people sensitive to gluten who still want to maintain cardiovascular health. The better your circulation, the sharper your brain.

Green it: don’t buy the excessively-packaged “boil in a bag” rice packets. Just make up a big batch of brown rice in a rice cooker on Sunday so you have it on hand for easy lunches all week.

11. Tea

You have to brew tea fresh or you won’t get the benefits of all those catechines (antioxidants) that boost your brain. Because tea has caffeine, don’t have more than 2-3 cups daily.

Green it: buy organic, fair trade loose leaf or packets to support sustainable business practices.

12. Chocolate

Things are looking increasingly better for chocolate. It’s got brain-boosting compounds, it’s loaded with antioxidants, and it has just the right amount of caffeine. Chocolate sends your serotonin through the roof, so you’ll feel happy in short order. Dark chocolate is also rich in fiber. (Remember, fiber = healthy cardiovascular system = healthy brain.)

Green it: go for super dark, fair-trade, pure organic chocolate, not the sugary, processed milk chocolate candy bars.

13. Oysters

Oysters are rich in selenium, magnesium, protein and several other nutrients vital to brain health. In one study researchers found that men who ate oysters reported significantly improved cognition and mood! Not all shellfish are good for you but oysters are a sure bet.

Green it: oysters are actually one of the most eco-friendly seafood options, so eat up!

14. Olive Oil

Though we know the brain does need a small, steady supply of glucose, don’t overlook fat. Studies have consistently shown that a low-fat diet is not the health boon we hoped it would be (remember the 90s low-fat craze?). In fact, avoiding fat can increase foggy thinking, mood swings, and insomnia. A diet rich in healthy fats is essential to clear thinking, good memory, and a balanced mood. Your brain is made of fat, after all.

One study of men found that those who relied on the processed vegetable fats found in salad dressings, snacks and prepared foods had 75% higher rates of mental degradation (dementia, memory loss) than men who ate healthy fats. Most processed foods and fast foods use corn oil, palm oil, soybean oil and other Omega-6 fats. You don’t want Omega 6 fats. Even saturated fat is safer than Omega 6′s.

Choose healthy fats such as those present in olive oil, nut butters, nuts and seeds, flax, oily fish, and avocados. Avoid processed fats found in pastries, chips, candy bars, snacks, junk food, fried foods and prepared foods. Eating the wrong fat can literally alter your brain’s communication pathways.

Green it: look for organic, local, or farmers’ market options when it comes to your food. You should also explore herbal remedies for mood swings and brain health.

15. Tuna

In addition to being another rich source of Omega-3′s, tuna, particularly yellowfin, has the highest level of vitamin B6 of any food. Studies have shown that B6 is directly linked to memory, cognition and long term brain health. Generally, the B vitamins are among the most important for balancing your mood. B6 in particular influences dopamine receptors (dopamine is one of your “feel good” hormones along with serotonin).

My personal cocktail: SAMe (nature’s happiness molecule) and a mega-dose of B-complex keeps me humming even when I’ve got a mountain of work to do. Which, like you, is all the time.

Green it: only eat tuna from sustainable fisheries, and if you’re looking for a B6 source that is vegetarian, opt for a banana, which contains a third of your day’s requirement (tuna offers nearly 60%).

16. Garlic

Garlic – the fresher the better – is one of the most potent nutritional weapons in your arsenal. Eat it as much as your significant other can stand. Not only is it fabulous for reducing bad cholesterol and strengthening your cardiovascular system, it exerts a protective antioxidant effect on the brain.

Avoid: I know it makes life easier, but don’t even think about buying the chopped or peeled garlic. Nutritional benefits = zero.

Green it: just choose organic, and go for local if you can get it.

17. Eggs

Eggs contain protein and fat to provide energy to your brain for hours, and the selenium in organic eggs is proven to help your mood. You really needn’t worry about the overblown cholesterol fears. (I have quite a bit to say on this topic but I’ll restrain myself for once.)

Green it: choose organic, free range, vegetarian fed eggs.

18. Green Leafy Vegetables

Spinach, kale, chard, romaine, arugula, lolla rossa – whatever green you like, eat it daily. Green, leafy vegetables are high in iron (slightly less “green” iron sources include beef, pork and lamb). Americans tend to be deficient in iron, which is too bad, because the deficiency is linked to restless leg syndrome, fatigue, poor mood, foggy thinking, and other cognition issues.

Green it: choose organic, and shop at your farmers’ market or order from a local CSA. Leave out the red meat a few days a week and rely on a big, well-seasoned green stir fry or salad.

19. Tomatoes

Go figure, but tomatoes don’t usually make the brain-boosting food lists. (Thank goodness I found the one that did so I’m not the only one.) Tomatoes contain lycopene, an antioxidant that is particularly good for your brain – it even helps prevent dementia. You have to cook tomatoes to get the lycopene – take that, raw foodies! Just kidding. But this does mean that ketchup is good for your brain. Although because of the sugar in it, you should look to other sources for most of your lycopene intake, such as fresh tomato sauce.

Green it: try to eat tomatoes that are local and get your lycopene in vitamin form when tomatoes aren’t in season. You’ll know when that is – the tomatoes will be pale, tasteless, and pithy.

20. Cacao nibs

That’s right, I’m putting chocolate on this list twice. My boyfriend knows I need it. I eat chocolate or cacao nibs daily and I think you might want to consider it, too. Cacao nibs are among the top five most powerful brain foods, right next to wild salmon and blueberries. My girlfriends and I like to mix cacao nibs with frozen blueberries and a generous splash of organic heavy cream while we watch really bad television on Sunday nights.

Green it: as long as it’s fair trade and organic, it’s green.

Things that drain your brain:

Alcohol kills your brain cells outright! Alcohol also interferes with dopamine production. Moderate amounts of alcohol, particularly resveratrol-rich red wine, can help improve your health, but anything beyond a glass or two of wine daily is a recipe for reduced brain function and energy loss.

Corn Syrup and Sugar lead to health problems like diabetes and obesity, and they’re terrible for your brain. Don’t eat sugar except on special occasions or as an infrequent treat. If you can’t cut back that much, try to limit yourself to just two bites of whatever tempts you daily.

Nicotine constricts blood flow to the brain, so while it may “soothe” jittery nerves, smoking will actally reduce your brain function severely – and the effects are cumulative.

A high carbohydrate lunch will make you sleepy and sluggish. Opt for a light meal with some quality protein, such as a salad with grilled chicken breast or vegetables and hummus or wild American shrimp and avocado.

On the subject of tea, I have become obsessed with loose leaf tea. Why mess around with tea bags? Loose leaf tea is better quality, for one. The key is setting yourself up with the right steeping options. But perhaps, more importantly, make sure the tea is organic. Think about it. Pesticide soaked tea leaves equals pesticide steeped tea. None of us care to drink DDT on a regular basis.

Happily, I’ve found Mountain Rose Herbs company. These Oregon folks just won a business ethics award and are highly compliant with sustainable, organic agriculture and pesticide free standards. The company is genuinely passionate about providing the best products and respecting our planet. This is good. Very good. Also, their tea is excellent. My current favorite is the Dao Ren Green Tea.

Their website is a little on the busy and earthy side, but don’t let it stop you. You can peruse their products on the site, download an online PDF catalog, or request a printed catalog. The tea is very reasonably priced. They also offer many other products, including bulk spices, jars, and other natural health supplies. Read up on the history of tea and the company’s green culture from beaucoup literature on recycled paper that comes along with their products.

Most of all, may you drink loads of tea, worry-free!

I’ve discovered the ultimate plant for green health: lemon verbena. The leaves from this plant make some absolutely delicious tea.

Alice Waters is a big fan of lemon verbena tea, I learned upon reading her biography. I later tasted it myself for the first time from dried leaves of a plant grown at the Edible Schoolyard, Waters’ educational, middle school kitchen and gardening project. I then understood – as the name implies – lemon verbena tea has an extremely soothing citrus flavor.

I since acquired my own plant, and it’s growing like a weed in a pot on my deck garden. I lucked out because my deck gets a ton of sun and the lemon verbena plant likes a lot of direct light. Once the plant is established, remove some of the leaves, lay them out to dry and store in mason jars or an airtight container.

To make tea, steep around one teaspoon of dried herbs in one cup of hot water, or see these recipes for using fresh leaves. (Or, make your own lemon verbena ice cream!)

Lemon verbena has great health benefits. It aids with relaxation and digestion, and apparently it can also help with relieving cramps.

Now that I’ve fully embraced drinking tea from loose, dried herbs, I’ve realized how fun it is to create your own blends. Add a peppermint plant to your herb garden, and make your own mix of lemon verbena and mint. Delightful!

See a few more tips on growing your own lemon verbena plant here.

A good night’s sleep allows us to tackle things with a clear head, more confidence, and in my case, more patience. Whether it’s writing a story lede, maintaining my running pace, or sitting in traffic, having seven hours of recharge under my belt makes my days run more smoothly. While some attempts at slumber cannot be controlled (like my husband’s snoring) there are ways to get in the groove that don’t involve counting sheep.

According to the Mayo Clinic, anxiety, depression and stress add to insomnia and the quality of your night’s sleep. Here are some tried and true tips to prepare for, and enjoy much needed down time:

Set an internal time clock
Humans like routine; it’s comforting and the inner time clock can help regulate your sleep pattern. Try heading to bed at the same time every night. Pick up a book that you’ve been meaning to get around to and treat yourself to 15 minutes before turning the lights out.

Develop a bedtime routine
Try a few minutes of meditation, quiet music or simple yoga stretches.

Curb the caffeine
Ban coffee, tea and soda with caffeine from four o’clock. Look for calming non-caffeine choices.

Create an inviting sleep environment
Quiet, dark, and relaxing. If you have noisy neighbors or are surrounded by city buses and trains, try a white noise machine, relaxation music (I like Celtic Bells) ear plugs, heavy curtains, or those sleep shades ala “I Love Lucy.”

Increase your thread count
Splurge for a set of good quality sheets, or at least a pillow case. The smooth, silky cotton will feel wonderful.

Clear the air
Considering that you’ll be breathing in the room’s air for seven to eight hours, be mindful of the quality, especially if you’re prone to dust and mold allergies. Try a HEPA filter.

Go essential
Lavender is one of the most popular essential oils in aromatherapy due to its calming effect. Try a few drops on your pillow.

Grandma Jeannie’s head-to-toe technique
My late grandmother would visualize calming her body beginning with her toes, and work her way up to the top of her head, taking a few seconds to address each area. It really worked!

Wetter is better
Treat yourself to a warm bath or shower, which will calm your muscles and help wind you down.

Uber high tech
Remember stumbling across technical journals that put you to sleep? Now’s the time to start collecting them and putting them to good use!

Another work week has just wrapped and while most are heading to their local pubs for a big happy hour pint, I am eager to brew myself an aromatic pot of loose-leaf tea – yes, everything about tea makes my heart swoon. Whether you drink tea to energize or relax, here are some tips for sustainable tea drinking that can also increase your enjoyment of this ancient beverage.

Go Loose-Leaf

Stop using tea bags and go with loose-leaf teas. Each time you use a teabag, the bag, string, tag and wrapper become another addition to your local landfill. Loose teas require minimal packaging, are stored (and brewed) in reusable containers, and are usually re-steepable.

There are some other great perks to drinking loose leaf as well:

Loose-leaf tea simply tastes better. Tea bag tea is usually very small and includes broken particles of leaf. While this tea dust infuses quickly, it tends to produce a very one-dimensional tea. Quality loose-leaf tea, on the other hand, gets to infuse and expand in your cup, resulting in a richer, tastier brew.

Loose leaf is more fun. While there are plenty of convenient loose-leaf tea infusers that make brewing quick and easy, using traditional teaware is a lovely ritual to incorporate into your day.

Loose tealeaves can be a great addition to your compost pile. In fact, a compost pile is the best place for your tealeaves: Never put your tealeaves in a toilet or sink, as they can cause clogs.

One warning: Many loose-leaf tea retailers offer quantity discounts. While these can appear to be a good deal, keep in mind that tea typically does not age well. Flavored teas (particularly if they have bits of dried fruit in them) can get stale within a few months, while unflavored teas will last year or two if stored properly (airtight containers, kept from sunlight, moisture, heat and strong smells). Buying a lot of tea just to get a discount – only to end up tossing much of it out – isn’t a sustainable practice!

Infuse, Infuse, Repeat!

As noted above, loose-leaf teas can usually be re-infused several times. Reusing tealeaves saves you money and reduces resource consumption. Some teas stand up to multiple infusions better than others do, and fortunately, they tend to be the teas that connoisseurs like most!

Here are some tips for choosing re-steepable teas:

Avoid flavored teas. The flavor usually fades dramatically after the first infusion.

Seek out high-quality oolong teas. Jade oolong and Ti Kuan Yin (Iron Goddess of Mercy) are two green oolongs that are famous for their staying power. Each infusion unveils a different layer of flavor. You can get as many as eight steeps (and sometimes more) from one spoonful of leaf!

Pu’erh teas can be an acquired taste, but they too can offer you many cups of tea from the same leaves. Pu’erh teas are specially processed and are often aged. They have intense flavor that varies from decidedly herbal to something akin to a barnyard.

Black teas tend to give up their flavor in the first steep or two, though a very high quality black tea is often good for two or three rounds.

Read Labels

Look for labels that certify that the tea is organic or biodynamic. Don’t be afraid to ask a tea company about its organic policy. Any tea company that is committed to sustainable tea production will be happy to tell you about the steps they take to ensure the integrity of its production.

Drink Closer to Home

While most tea grows in China, Japan, Africa and South Asia, a few intrepid tea growers are farming tea in the west. There are tea farms in Hawaii, Washington state, and South Carolina. Tea drinkers in the UK can even enjoy teas that are grown in Cornwall. When we drink tea that is grown closer to us, we can enjoy fresher tea that required fewer resources in its journey to us.

Editor’s note: This is a guest post from Lainie Petersen, a tea enthusiast who is committed to both sustainable living and sustainable theology. You can follow her personal tea blog here.

Who says the pantry has to be a catch-all black hole for prolonging that shelf life? That’s what high school lockers are for!

It’s time to take stock in our most commonly used household storage nook, and make it as inviting as a vintage general store (with a modern green twist, of course).

Open pantries offer easy access for the organic gardener and cook, but also should look tidy since they are exposed to your visitors. Mine is en route to the powder room. Yep, that’s country life.

I find it’s easy to arrange a cool display of dry goods, serving dishes and other odds and ends containing them in boxes, baskets and jars. Not an organizer? Just read Catherine Pond’s The Pantry, chronicling the history of keeping every can and tin in its place.

I have staged many pantries of homes, finding prospective buyers are sold on nicely organized utility spaces, especially when they also reflect some style with a pop of color, especially red. Yes, panache even extends to the shelves of rice and cereal.

Here are some ideas for ordering and celebrating your own healthy green pantry:

First, sort by category: If you haven’t done so already, clean and designate shelves for categories, i.e. stack tea and cereal boxes side by side on one shelf, canned goods on another, bulk items like rice, pasta and beans on another. Make sure the opened items remaining in original packages are well sealed to preserve them. I use painter’s tape to reseal cardboard boxes to keep items fresh.

Reuse glass mason jars: Mason jars from pasta sauce, jams and other goods are great to reuse for storing and displaying dry goods from quinoa and baking ingredients to various herbs and spices. I love reusing an array of food jars in my pantry because they look cool and help extend the shelf life of the dry goods.

Reuse plastic take-out containers: If you are stuck with plastic, spare the landfill and clean out some of the small containers to store items. Below, they work well when reused for cake decorating sprinkles and beans.

Store packaged items in boxes: You can recycle your old shoe or gift boxes or locate eco-friendly storage to place on the shelves along with the jars and cans. Boxes, especially those with fun patterns from the Container Store and other organizing outlets, add flair even when the cupboard is bare.

Canisters add flavor: Mix in canisters (an easy second hand store or garage sale find) to hold organic flour, raw sugar, baking soda and other items you use for baking those healthy treats every day after work (yeah, right). I have a collection of canisters given as gifts or found in various towns. I love how they look in an open pantry, especially red ones like these from Amazon. These are also great for animal kibble which you might want to buy in bulk to avoid the large paper bags.

Stackers for shelving help you squeeze more in and add depth: Locate metal stacking shelves, like this one from Oraganizeit, to lift and separate cans and other packages. These work really well in both small and large pantry nooks.

Baskets add charm and warmth: Good natural fiber storage, like these water hyacinth nesting baskets from Cultural Elements, work well for onions, potatoes and other perishables, especially in an enclosed pantry. These fresh foods tend to last best in darkness and under wraps. Baskets are great for all loose food items and add that creature comfort organic appeal.

Design tip: Remember, even if your pantry consists of one cupboard in your apartment kitchen, you can still make it look fun and appealing – you might even hang cups on hooks inside.

For me and many of you, ordering clutter reduces stress. When I don’t have to spend an hour searching for taco mix, I don’t scream as much on taco night. Can a neat pantry save on therapy? Try it and see.
