I forgot to mention that the time I heard about bleached flour was in the beginning of 2002 on a website where someone from Sweden tried to make a traditional Swedish bread (Lussekat=Lucia bun) and was unable to find unbleached flour.
The only thing that he was able to find was something labelled "Pure wheat flour" but it was denser than our traditional wheat flour but in the end he was able to bake the bread.

I am happy that you are able to get unbleached flour in the USA.

If someone is interested in the receipt on the "Lussekat" I can post it. It is a special bread containing saffron baked for the day of Saint Lucy the 13 December and Yule.

Hi
I am from Sweden and the first time I heard about that it was standard to use bleached flour I thought Americans got to to be crazy whey would you wont to bleach flour. To use or sell bleached flour is unheard of here and is probably ILLEGAL.

One adder thing you have to watch out for when baying flour in USA is the cancer causing chemical Bromine which is illegal in Sweden and probably in the rest of the EU it is also illegal to use Bromine as a flame retardant.

So funny the timing of this article. I just bought unbleached yesterday. I was holding the bleached and asked myself what the heck I was doing. Bleached!
Then saw I could get unbleached. Always thought it was either bleached or wheat and what is so dense to bake with it seems!
Three cheers for unbleached.
