<p><em>Serves 1</em></p>
<p><strong>Ingredients</strong></p>
<ul>
<li>2 eggs</li>
<li>1 tablespoon butter</li>
<li>4-5 slices of sausage (elastic skin removed)</li>
<li>1 plum tomato, diced</li>
<li>1 tablespoon chopped scallions</li>
<li>Sea salt and black pepper to taste</li>
<li>2-3 ounces goat cheese (or any cheese of choice)</li>
</ul>
<p><strong>Directions</strong></p>
<p>Preheat the oven to 350 degrees Fahrenheit. Generously grease the bottom and sides of a tiny pot or ramekin with 1/2 tablespoon of butter.</p>

<p>Crack both eggs on top, season with salt and pepper, and add the remainder of the scallions and tomatoes. Piece the remaining half tablespoon of butter on the top of the layers.</p>

<p>Cook in the oven for about 15-20 minutes, or until the eggs have almost cooked to your mother&#8217;s liking. Remove the pot, crumble the goat cheese on top, and pop it back into the oven on broil for an additional minute, or until the cheese has melted.</p>
