<p>Halloween can be about tricking and treating but it can also be about mystery and masquerade. This White Russian recipe floats eerily in a martini glass and makes a perfect dessert cocktail. Adding a dash of cinnamon transforms it into a warming flavorful treat.</p>
<p>This cocktail will look best in a long-stemmed martini glass but don&#8217;t worry if you don&#8217;t have them since any clear cocktail glass will do.One of my favorite ways to serve cocktails when entertaining is in mixed-matched crystal glasses that I collect from flea markets and junk shops.</p><div id="inContentContiner"><!-- /4450967/ES-In-Content -->

<p>Using half and half instead of the traditional heavy cream makes for a much smoother cocktail. You still get all the creamy flavor with about half the calories. As for coffee liquer, your choices may be limited to the popular brand Kahlua. However, you might be able to find homemade versions at gourmet food markets.</p>
<p>There is of course the world’s most notable White Russian connoisseur: The Dude from &#8220;The Big Lebowski&#8221;. The Dude’s approach to a White Russian is slightly different than mine in that I like to chill the cream and coffee liqueur first in a cocktail shaker and serve it without ice. That way you get the full experience of drinking what can be described as an adult milkshake.</p>

<p><strong>Ingredients</strong></p>
<p>6 ounces half and half<br />

<p><strong>Directions</strong></p>
<p>In a metal cocktail shaker combine 3 large ice cubes with 1 ounce of each: half and half, coffee liquor and vodka.</p>
<p>Vigorously shake for 20 seconds and pour into a martini glass. Sprinkle a tiny pinch of cinnamon and serve immediately.</p>

<p><em>Makes 8-10</em></p>
<div><strong>Ingredients</strong></div>

<div><em>For the dough:</em></div>

<li>2 cups whole-wheat flour</li>
<li>1 tablespoon baking powder</li>
<li>1 teaspoon fine sea salt</li>
<li>2 tablespoons <a href="http://ecosalon.com/8-substitutions-for-the-most-common-kitchen-ingredients/" target="_blank">vegan butter</a>, chilled</li>
<li>3/4 cup vegan milk (almond, soy, rice)</li>
</ul>
<div><em>For dough filling:</em></div>

<li>2 teaspoons vegan butter, melted</li>
<li>3/4 cup coconut palm sugar</li>
<li>1 tablespoon cinnamon</li>
</ul>
<p><em>For the pan:</em></p>
<ul>
<li>1/2 cup vegan butter, melted</li>
<li>1/3 cup coconut palm sugar</li>
</ul>
<p><em>Cream &#8220;cheese&#8221; <a href="http://ecosalon.com/homemade-whipped-cream-frosting/" target="_blank">frosting</a>:</em></p>
<ul>
<li>1/2 cup powdered sugar</li>
<li>2 tablespoons vegan milk (almond, soy, rice)</li>
</ul>
<p><strong>Directions</strong></p>
<p>Preheat the oven to 450 degrees Fahrenheit.</p>
<p><em>For the dough, </em>in a bowl, combine the flour, baking powder and salt. Add the vegan butter and use clean hands to massage it into the flour mixture. Add the milk and continue to massage until it forms a dough. Roll out the dough on a floured surface to form a 1/2-inch thick rectangle.</p>
<p><em>For the filling</em>, in a small bowl mix together the cinnamon and coconut palm sugar. Brush the top of the dough evenly with the melted vegan butter and sprinkle the cinnamon sugar mixture evenly across the buttered dough. Roll the dough up, jelly roll style, starting from a long end, to form a log. Cut into about 8-10 rolls.</p>
<p><em>For the pan</em>, melt the vegan butter and pour it into a 9-inch round (or of similar size) pan. Sprinkle the buttered pan evenly with the coconut palm sugar. Place the rolls, cut-side up, in the pan. Place in the oven and bake for 12-15 minutes, or until golden brown. Repeatedly check on the cinnamon rolls while they are cooking during the last five minutes to make sure they down get too brown.</p>
<p><em>For the frosting</em>, let the cinnamon rolls cool down a bit, as to not burn your tongue. Meanwhile, whisk together the powdered sugar and milk. Use it as a frosting before serving each roll. Enjoy!</p>

<p>Spices don&#8217;t just add another element to your cooking; they&#8217;re also good for your health. In fact there&#8217;s a reason that people have been using spices for thousands of years. <a href="http://experiencelife.com/article/5-healing-spices/" target="_blank">Scientists are now uncovering</a> their vast potential power, from helping ease chronic conditions to the prevention and treatment of more than 150 health problems. Why? Without getting into the complicated science of it (and there&#8217;s <a href="http://www.onespirit.com/health-&amp;-healing-books/alternative-medicine-books/healing-spices-by-bharat-b-aggarwal-1070496981.html" target="_blank">lots of it</a> if you&#8217;re interested) spices have a variety of benefits, including being high in antioxidants, having anti-inflammatory properties and they can even promote weight loss. There is a whole world of spices out there to add health benefits to your food. Here&#8217;s a list of ten to start with.</p>

<p>Why is a chile pepper hot? Capsaicin&#8211;the active ingredient that basically makes a chile taste hot is actually quite good for you. It has been shown to inhibit bacterial growth, boost your metabolism, which in turn helps with weight loss, give you more energy and relieve skin allergies. An Australian study found that adding chiles to meals may <a href="http://www.drweil.com/drw/u/WBL02066/Chiles-vs-Cholesterol.html" target="_blank">protect against the buildup of cholesterol in the blood</a>. So, don&#8217;t be afraid of increasing your spice tolerance.</p>
<p><strong>2. Turmeric</strong></p>
<p>Turmeric&#8217;s claim to fame is curcumin, an antioxidant that some studies have shown to help reduce the risk of heart failure and inhibit the growth of cancer cells. It&#8217;s also an incredible anti-inflammatory, and can even be used in the place of ibuprofen &#8211; good for people dealing with long term chronic pain and wanting to limit their drug intake. If you are going that route, be sure to look for turmeric extract, sold in tablets or capsules and note that the effects are not felt immediately. Add the spice (or fresh root if you can find it) into stir fries and lentil dishes, or anything that needs a little color.</p>
<p><strong>3. Cardamom</strong></p>
<p>Well-known in Indian cooking, and the beloved spice of Scandinavian baked goods, cardamom contains limonene, a chemical that has been shown to boost antioxidant activity. It has also been shown to help with lowering blood pressure and improves digestion. It also has alkaline properties, and in the Middle East, coffee is often made with cardamom, reducing the coffee&#8217;s acidity and <a href="http://www.yogajournal.com/lifestyle/2786" target="_blank">neutralizing the effects of the caffeine</a>.</p>
<p><strong>4. Cinnamon</strong></p>
<p>Helping to balance blood sugar, cinnamon is helpful for those with dealing with type 2 Diabetes. In fact, in a <a href="http://ajcn.nutrition.org/content/85/6/1552.abstract" target="_blank">Swedish study</a> (albeit small) where subjects ate a bowl of rice pudding&#8211;half of them with cinnamon added, half without&#8211;those who ate the cinnamon version ended up with significantly lower blood sugar levels. Given that cinnamon works well in sweet and savory dishes, there&#8217;s no end to how it can be used.</p>
<p><strong>5. Ginger</strong></p>
<p>Ginger is another anti-inflammatory, and it&#8217;s also ideal for calming an uneasy stomach. It&#8217;s also full of antioxidants; one teaspoon of ground ginger has as many antioxidants as a cup of spinach. While adding ground ginger to your morning bowl of granola and sprinkling onto dishes is good, it&#8217;s also worth buying fresh ginger root, which has a little more of a kick to it. A few pieces of crystallized ginger can be good for dealing with motion sickness, and for a morning spike of energy, I like adding it to green smoothies.</p>
<p><strong>6. Fennel</strong></p>
<p>Plagued by menstrual cramps every month? With its phytochemicals and phytoestrogens, fennel can help offset cramps. Get the benefits from fennel seeds by grinding them and steeping with tea. With its licorice-like flavor, fennel seeds are also good in fruit salad and with grilled meats and seafood.</p>
<p><strong>7. Parsley</strong></p>
<p>You may use it just as a decorative garnish, but researches at the University of Missouri found that <a href="http://munews.missouri.edu/news-releases/2011/0509-parsley-celery-carry-crucial-component-for-fight-against-breast-cancer-mu-researcher-finds/" target="_blank">parsley can actually inhibit breast cancer cell growth</a>. Parsley is also rich in vital vitamins including C, B12, K and A, which means it <a href="http://ecosalon.com/five-herbs-and-spices-to-boost-your-immune-system/" target="_blank">keeps your immune system strong</a>. Add it into soups and salads, or mix with fresh fruit for a delicious smoothie.</p>
<p><strong>8. Garlic</strong></p>

<p>Sweden is equated with many things, but there is nothing as iconic as the cinnamon roll. In Swedish culinary culture, every cup of coffee deserves to be served with a baked good. This tradition is called <em>fika</em> and at its core is the cinnamon roll.</p>
<p>I don&#8217;t mean the cream cheese frosting topped, so-sweet-it-makes-you-cringe version that is served in the U.S., I mean the classic Swedish pastry, with a hint of cardamom and just sugary enough. In a country where cinnamon rolls are a staple in every cafe and bakery, and every respectable Swede has made their own batch at least once in their lives, it should come as no surprise that Sweden is in fact the cinnamon roll&#8217;s presumed country of origin.</p><div id="inContentContiner"><!-- /4450967/ES-In-Content -->

<p>The beauty of the Swedish cinnamon roll is in its versatility. Depending on your mood, you can switch out a few key ingredients for a completely different taste. Cardamom infused filling instead of the standard cinnamon and sugar mix for example.</p>
<p>October 4 marks Kanelbullens Dag (Cinnamon Roll Day) &#8211; <a href="http://www.kanelbullensdag.se/">an entire day devoted</a> the the baked good. Since you probably don&#8217;t have the chance to sit in a warm Stockholm cafe on a crisp autumn day and order a <em>kanelbulle</em> from the counter, here are a few versions you can make yourself. Just be sure to serve with coffee.</p>
<p><strong>Kanelbullar &#8211; Swedish Cinnamon Rolls</strong></p>
<p>Makes about 30-40 buns</p>
<p><em>Dough ingredients:</em></p>
<ul>
<li>2 1/8 cup (500 ml) milk</li>
<li>25g fresh yeast (or 2 envelopes dry active yeast)</li>
<li>2/3 cup (150 ml) brown sugar</li>
<li>5 7/8 cups (1400 ml) flour</li>
<li>2 teaspoons whole cardamom seeds</li>
<li>½ teaspoon salt</li>
<li>5 ¼ oz (150 g ) butter (at room temperature)</li>
</ul>
<p><em>Alternative 1: cinnamon filling</em></p>
<ul>
<li>4 ½ oz (about 125 g) butter (at room temperature)</li>
<li>1/3 cup (75 ml) regular sugar</li>
<li>2 ½ teaspoon cinnamon</li>
</ul>
<p><em>Alternative 2: cardamom filling</em></p>
<ul>
<li>4 ½ oz (about 125 g) butter (at room temperature)</li>
<li>1/3 cup (75 ml) brown sugar</li>
<li>4 teaspoons whole cardamoms</li>
<li>(optional: 1 teaspoon cinnamon)</li>
</ul>
<p><em>Topping</em></p>
<ul>
<li>One small egg (whipped together)</li>
<li><a title="link to wikipedia" href="http://en.wikipedia.org/wiki/Nib_sugar" target="_blank">Pearl sugar</a> or sliced almonds</li>
</ul>
<p><em>Prepare the dough: </em>Crumble the yeast (if using dry yeast prepare it as required) in a big bowl. Heat milk until it is warm to the touch, about 100ºF (about 110ºF for dry yeast). Add the milk to the yeast and stir until yeast has dissolved.</p>
<p>Crush the cardamoms in a mortar and pestle.</p>
<p>Mix together flour, sugar, cardamom and salt before adding it to the milk and yeast mixture. Add in the butter in small cubes. Blend well, either by hand or by using a food processor. Knead it well for about 5-10 minutes.</p>
<p>Cover the dough and place in a draft free place and let it rise for at least 40 minutes.</p>

<p><em>Filling:</em> Mix all ingredients for the filling to an even batter. It is important for the butter to be at room temperature so it&#8217;s easier to spread. <em></em></p>
<p>Divide the dough into two pieces and using a rolling pin (or a wine bottle), roll each of them out separately to the shape of a rectangle (see diagram above).</p>
<p>Spread half of the filling onto each piece of rolled out dough so that it covers the entire area. Roll the dough up beginning with the long side. Slice the roll into about 20 equal sized (about 1 inch wide) slices and place them with their cut side up on baking sheet. Repeat above procedure with the last piece of dough.</p>
<p>Let them rise for about 30 minutes.</p>
<p>Note: You can also fold the dough as shown below which is more common when making the bun with cardamom filling.</p>

<p>In a small bowl, whisk the egg and brush all buns and sprinkle pearl sugar or sliced almonds on top.</p>
<p>Bake them in the oven at 225ºC (about 440F) for 8-10 minutes.</p>

In another study, published by <em><a href="http://www.fertstert.org/home">Fertility and Sterility</a></em> in 2007, researchers gave half of the participants cinnamon extract and the other half a placebo. Over an 8-week period, the women who took the cinnamon extract showed greatly reduced insulin resistance compared to the placebo group.</p>

<p>For a dessert, I often take walnuts, drizzle them with honey, add a few chocolate chips and call it a night. I then got to thinking how such a combo would work as a variation of the classic peanut butter cup, only deconstructed. This recipe does just that. It glorifies my makeshift dessert into something a bit more crave-worthy and gourmet. It’s also super easy!</p>
<p>Walnuts are the star of this desert. Almonds are garnering a lot of spotlight these days, and for good reason, but walnuts deserve some stage time too. In fact, walnuts contain nearly twice the amount of antioxidants than the same portion of any other nut. Walnuts also contribute to heart health, reduce the risk of certain types of cancer, prevent Type 2 diabetes and are packed with protein and fiber.</p><div id="inContentContiner"><!-- /4450967/ES-In-Content -->

<p>I use 70-percent dark chocolate in this recipe to minimize sugar content, but you could go ahead and use any chocolate you’d like.</p>
<p><strong>Honey Walnut Butter Chocolate Bark</strong></p>
<p><strong>Ingredients:</strong></p>
<ul>
<li>200 grams dark chocolate (about 2 bars)</li>
<li>2 cups walnuts</li>
<li>2 tbsp honey</li>
<li>1/2 tsp cinnamon</li>
<li>Dash of sea salt</li>
</ul>
<p><strong>Recipe:</strong></p>
<p>Melt your favorite dark chocolate in a saucepan over low heat. Continuously mix the chocolate to break down the pieces. Be careful not to burn the chocolate.</p>

<p>Pour half the melted chocolate onto parchment paper. Spread until it forms an eighth-inch thick piece and put it into the freezer to harden. Set aside the other half of the melted chocolate for later use.</p>

<p>While the chocolate firms up in the freezer, spread the walnuts on a parchment paper lined baking sheet and drizzle evenly with honey.</p>

<p>Pop into a 350 degree Fahrenheit oven for approximately 12 minutes, or until the walnuts just begin to brown. Stay near the oven to prevent the walnuts from burning.</p>
<p>When finished, remove the walnuts and let them cool for a few minutes before placing them into a food processor to blend. When blending, standby as the walnuts turn from chunky to grainy. Once mealy like flour, add the sea salt and cinnamon. Continue to process until smooth but clumpy. Be patient &#8211; it will form butter. When it is complete, you should be able to shape the walnut butter with your hands.</p>

<p>Remove the chocolate from the freezer and, keeping about 1/2-inch in from the edge of the chocolate, place an even layer of the walnut butter atop the chocolate. You will have to pat down the walnut butter between your hands before placing onto the chocolate, as it’s too thick to be spreadable.</p>

<p>Ahern: For Christmas, I want cinnamon rolls. To tell the truth, I have made them every Christmas for the past four years. The first year’s were awful: gnarled at the edges, a bit burnt, and dry as insulation. The second were from a mix. The third year…Did I make them the third Christmas? I was eight weeks pregnant, sleeping and sick most of the time. It’s a bit of a blur.</p><div id="inContentContiner"><!-- /4450967/ES-In-Content -->

<p>Last year, Danny and I proudly carried in the cinnamon rolls we had created for the first draft of our cookbook. And they were….good. I mean, really good. But they still didn’t match the image I had in my mind of what a good cinnamon roll should be.</p>
<p>I want a soft, pliable dough, one that tastes good on its own. Yes, I love plump golden raisins, brown sugar almost melting, the ooze of cinnamon-scented butter on the edges, and cream cheese frosting. Really, how could you not love cream cheese frosting? Most of all, I want a cinnamon roll that stands up to the rush of Christmas morning, with a few stragglers left until the afternoon when we pick at the caramelized edges to stave off the hunger pains until dinner begins.</p>
<p>I want the cinnamon roll you see above. And I need it to be gluten-free.</p>
<p>A few days ago, I finally baked it.</p>

<p>I have been <a href="http://glutenfreegirl.blogspot.com/2009/12/gluten-free-cinnamon-rolls-update.html">baking cinnamon rolls non-stop for the past few weeks</a>. I learned so much from every batch, from the botched to the beautiful, that none of it has been a waste. But somewhere in the last few days, I started growing close-throated at the idea of another cinnamon roll. Time to bake something else. My dear friend, Tita, a close confidante for the past 18 years, knows her food. Tita’s the one who gave me <a href="http://glutenfreegirl.blogspot.com/2009/07/gluten-free-cornbread.html">the cornbread recipe we love</a>. When I told her stories of making cinnamon rolls that begin by heating oil and milk, she made a face. “I’ve never done that. All you need is a white bread dough.”</p>
<p>It had never occurred to me that a cinnamon roll dough is a white bread dough. (I’ve been studying cinnamon roll recipes like they are the Torah. I swear no one mentioned this.)</p>
<p>I may be a gluten-free girl, but the white bread dough doesn&#8217;t intimidate me. I pulled out the scale and measured out the ratio of flours to liquids to eggs. I chose almond flour for its high protein content and slightly sweet taste. (Corn flour shows up in all the Italian gluten-free delicacies we ate on our honeymoon.) And I pulled out potato starch, tapioca flour, and sweet rice flour, for the starchiness. I turned to Little Bean, babbling and banging the whisk on the countertop beside me, and said, “Let’s begin.”</p>
<p>I knew it under my hands as I mixed and rolled. This was the one.</p>
<p>Now, my cinnamon rolls may not be the ones you like best. That’s okay. There’s not a single creative expression that will win universal approval. That’s not why we do this.</p>
<p>Years ago, before I moved to New York, my partner, a painter, and I talked about why we do what we do, this crazy passion and need to put things on blank canvases. He said something that has always stayed with me: “I just make the paintings I wish I could look at. You should write the books you want to read.”</p>
<p>That’s what I’m always doing, when I write, whether it’s letters or books. I’m just sitting here trying to write what I wish I could read.</p>
<p>And now I’ve created the cinnamon rolls I wished I could eat.</p>
<p>If you enjoy them too, that’s all the better.</p>

<p><strong>Gluten-Free Cinnamon Rolls</strong></p>
<p>You’ll see that I have given the flour measurements here in ounces. I bake by weight, with a trusty scale, spooning out flours to exactly four ounces. It makes baking more precise, which is vital to gluten-free baking. It also, however, makes it liberating. Once you figure out the ratios, you don’t need someone else’s recipes. You can make it up on the spot.</p>
<p>That’s my hope, that enough of you start baking by weight that you won’t even need to look at my recipes. We can just have conversations instead.</p>
<p>I know that some of you will ask about substitutions. I don’t know. If you can’t eat almonds, or have an allergy to corn, or have just run out of potato starch, you can substitute other flours, if you use the same weight as the original. I’ve used brown rice flour, sorghum, teff, and arrowroot powder successfully here too. The ratio is what really matters. Now, personally, I probably wouldn’t use any of the bean flours in cinnamon rolls, or mesquite, or anything that smacks of healthy eating. It’s a cinnamon roll. Let it be starchy and doughy for one day.</p>
<p>(I’ve put the flours into cups, which I measured after I baked these. Keep in mind that how you measure a cup may be different than how I do it here.)</p>
<p>These cinnamon rolls can be dairy-free, as well as gluten-free. In fact, the rolls you see here were made with goat’s milk powder, so if you need to avoid cow’s milk, this is your recipe. You could substitute soy milk powder or rice milk powder, if you can find it.</p>
<p>Other than that, I really don’t know. I’m pretty darned happy with these cinnamon rolls. They’re gluten-free. That’s how I need to eat. If there are ingredients here you can’t eat, then it’s your turn to adapt this recipe and make these the best cinnamon rolls for your kitchen.</p>
<ul>
<li>1 1/2 cups water</li>
<li>3 tablespoons sugar</li>
<li>2 1/2 teaspoons active-dry yeast</li>
<li>4 ounces almond flour (1 1/4 cup)</li>
<li>4 ounces corn flour (3/4 cup)</li>
<li>4 ounces sweet rice flour (3/4 cup)</li>
<li>4 ounces potato starch (2/3 cup)</li>
<li>4 ounces tapioca flour (1 cup)</li>
<li>1 tablespoon xanthan gum</li>
<li>1 1/2 teaspoon fine sea salt</li>
<li>1/4 cup brown sugar</li>
<li>1/2 cup milk powder (we used goat milk powder in this batch)</li>
<li>2 large eggs, at room temperature</li>
</ul>
<p><strong>Filling for Cinnamon Rolls</strong></p>
<ul>
<li>4 ounces unsalted butter (1 stick or 8 tablespoons)</li>
<li>2/3 cup brown sugar</li>
<li>4 teaspoons cinnamon</li>
<li>3 tablespoons agave nectar (or maple syrup)</li>
<li>1/2 cup golden raisins</li>
<li>1/2 cup walnuts</li>
</ul>
<p><strong>Cream Cheese Frosting</strong></p>
<ul>
<li>4 tablespoons unsalted butter, softened</li>
<li>4 tablespoons cream cheese, at room temperature</li>
<li>1 teaspoon vanilla extract</li>
<li>2 cups powdered sugar</li>
</ul>
<p><strong>Activating the yeast.</strong> Bring 1 cup of the water to 115°. This is a good temperature for yeast — not too hot, not too cold. If you want to be particular about it, you can use a thermometer to measure the temperature. I like to turn on the tap water and run it over my wrist. When the water feels like the temperature of my skin (with no cold splashes or hot pockets), it’s ready. Mix the water, yeast, and sugar in a medium-sized bowl. Set it aside to rise, about 15 minutes.</p>
<p><strong>Mixing the dry ingredients.</strong> Combine the almond flour, corn flour, sweet rice flour, potato starch, tapioca flour, xanthan gum, and salt together. Whisk them together in a food processor, or in a stand mixer, or with a whisk. Combining them into one flour will help the final cinnamon rolls to be light, rather than dense and lumpy. Add the brown sugar and milk powder. Stir to combine.</p>
<p><strong>Finishing the dough.</strong> Bring the remaining 1/2 cup of water to 110°. If you have a stand mixer, move the dry ingredients into the bowl of the stand mixer. (If not, you can make this dough with a hand mixer or by hand.) Turn the mixer on medium-low speed and add the yeasty water, then the eggs, 1 at a time, mixing in between. Mix for a few minutes until the dough comes together. If the dough feels a bit too dry, add the remaining water. (I always seem to need it.) The dough should be soft and a bit shaggy but not soggy. It will NOT be as firm as you expect a gluten dough to be. Instead, you are aiming for pliable and a bit spongy, like a cookie dough.</p>
<p>Yeast doughs will vary in behavior depending on the weather. These measurements are a guide. If you find you need another splash of water to make the dough feel right, then go ahead. If the dough feels too wet (like you need to wipe your hands after touching it), then add a touch more potato starch. Start to trust your instincts.</p>
<p><strong>Letting the dough rise.</strong> Move the dough to a large greased bowl. Cover with a clean tea towel and set the bowl in a warm place in the kitchen. Allow it to rise until it has doubled in size, about 1 hour. The dough will have become a bit more pliable, a little more like gluten dough, at this point.</p>
<p><strong>Rolling out the dough.</strong> Grab a Silpat (or piece of parchment paper) and lay it on a large baking sheet. Move 1/2 of the dough onto the Silpat and cover it entirely with plastic wrap. Slowly, roll out the dough to the edge of the baking sheet. (You’re rolling out its width, first.) I try to make the dough the width of the rolling pin. Next, spin around the baking sheet and roll out the dough lengthwise. You probably won’t take it as far as the edge. Simply roll it out to about 1/2-inch thick. Take off the plastic wrap.</p>
<p><strong>Making the filling.</strong> Melt the butter on the stove, on low heat. Put half the brown sugar, cinnamon, agave nectar, golden raisins, and walnuts onto the rolled-out dough. Drizzle 1/4 of the melted butter on top.</p>
<p><strong>Rolling the dough.</strong> Here’s the important part: go slowly. Grab the Silpat on the edge farthest from you and pull it up gently. The edge of the dough should start to roll away from the Silpat and toward the dough. If not, then nudge it with your fingers. Make tight rolls, moving slowly and patting the dough gently as you go. Roll the dough, then press it down with the Silpat, then roll some more, with the dough falling toward you, going slowly. If the filling oozes out as you reach the end, that’s okay. It’s a sign you’re going to have good cinnamon rolls.</p>
<p>(Nothing of this should be about being perfect, anyway.)</p>
<p><strong>Cutting the dough into rolls.</strong> Go grab your dental floss. Yes, your dental floss. Cut a long piece of it, longer than two hand widths apart. Slide the piece under the log of dough, then bring the two edges together to cross over the top. By doing this, you should be slicing a piece off the log. This makes for lovely, neat pieces, instead of jagged hunks. Make your way down the log of dough with the dental floss. You should end up with about 8 pieces, with ragged end bits as well.</p>
<p>(Sometimes I bake the ragged ends separately, as little cinnamon swirls. Sometimes I just throw them in.)</p>
<p><strong>Preparing to rise the rolls again.</strong> Pour 2 tablespoons of the melted butter into the bottom of a pie pan. Place the sliced rolls into the buttered pan, tightening the rolls if they have begun to unravel. Set them aside to rise.</p>
<p>Repeat this process with the other half of the dough and remaining filling.</p>
<p>Allow the rolls to rise for 1 more hour. Gluten-free doughs do not rise as high as gluten doughs do on the second rise, but they do puff out nicely. It’s worth it.</p>
<p>Baking the rolls. Preheat the oven to 350°. When the oven has come to temperature, slide in both pans. Bake until the rolls fill firm to the touch when you press on both sides of one, but still with some give, about 25 minutes.</p>
<p>Allow the rolls to cool for about 10 minutes, then invert them onto a plate.</p>
<p><strong>Frosting the rolls.</strong> Put the butter and cream cheese into a food processor. Whirl them up. While that is mixing, pour in the vanilla extract. Add the powdered sugar in handfuls, looking at the texture of the frosting between batches. It usually takes about 2 cups for frosting to be thick and rich in our food processor, but you may like a different texture. This is only a guide.</p>
<p>Frost the rolls when they have reached room temperature.</p>
<p>Go at it.</p>
<p>Makes about 16 cinnamon rolls.</p>
