<p><em>Take whatever you think you know about sandwiches and step it up a notch: in <a href="http://ecosalon.com/stop-the-presses-a-green-cleaning-line-that-actually-works/">Denmark</a>, the sandwich is outshone (quite nicely) by the smørrebrød – an open-faced sandwich whose limits are imposed only by your culinary imagination.</em></p>
<p>Smorrebrod starts very simply: all you really need to make it is Danish rye bread and butter.</p>
<p>&#8220;It becomes smørrebrød the second you have the bread and butter on it,&#8221; Scott Peabody, head chef at The Copenhagen in New York, told Serious Eats. &#8220;Anything else you put on after that is extra.&#8221;</p>
<p>For this reason, make sure that you start your smørrebrød right, with real Danish rugbrod or rye bread. Danish rye is a dense, grainy bread that will add tons of flavor to your sandwich and provide a sturdy base for toppings. You can find it in some bakeries, or you can make it yourself. There are several recipes out there, but we like <a href="http://nordicfoodliving.com/danish-rye-bread-rugbrod/" target="_blank" rel="noopener noreferrer">this one</a>, which doesn&#8217;t require quite as long a fermentation as some others.</p><div id="inContentContiner"><!-- /4450967/ES-In-Content -->

<p>Once you have your bread and a smear of good-quality butter (said to keep the bread from soaking up too much moisture and getting soggy before you finish eating), you can top it with pretty much anything you like. To give you a few ideas, here are some of our favorite smørrebrød recipes.</p>
<h3>1. Herring</h3>
<p>Herring is a fairly common smørrebrød ingredient, and it&#8217;s an excellent seafood choice. Net-caught Pacific herring is one of the most sustainable fish options out there, according to the Monterey Bay Aquarium, and this fish is also rich in omega 3 fatty acids.</p>
<p>In <a href="http://www.lavenderandmacarons.com/entrees/herring-smorrebrod-danish-sandwich/" target="_blank" rel="noopener noreferrer">this recipe</a>, pickled herring is paired with sweet beets and just a hint of creaminess afforded by sour cream. Garnishes like green onions, dill, and capers round out this dish nicely.</p>

It&#8217;s delicious any time of day, but we think it&#8217;s the perfect breakfast smørrebrød option.</p>

<p>It turns out not all politicians on the world stage are bloated ketchup-on-steak egomaniacs. Some are pragmatic and willing to self-sacrifice in order to make the world a (hopefully) better place. (Not that <a href="http://ecosalon.com/raw-vegan-matcha-macaroons-recipe/">going vegan</a> is any kind of sacrifice.)</p>
<p>Unlike the climate deniers in office in the U.S., Danish politicians are fully aware of the impact of a warming planet, and the many factors contributing to its condition, namely our aggressive animal production. Around the world, more than 56 billion animals are raised for food every year &#8212; not including fish and seafood. That&#8217;s nearly ten times the amount of humans on the planet, and most certainly an industry impacting our climate.</p>
<p>“Western food production has an enormous climate footprint,” Uffe Elbæk, Alternative party leader, said in a statement. “Political action is needed, and I find it important that we, as politicians, take the first steps and begin to ‘walk the talk.’”</p><div id="inContentContiner"><!-- /4450967/ES-In-Content -->

<p>Denmark isn’t historically known for a plant-based diet – or even for that many plant-based meals in general, save for a few cabbage dishes. It’s got a rich history of eating animals (pork, beef, and liver are some of its signature foods). But as a progressive country working toward clean energy and reduced greenhouse gas emissions, the Danish Council of Ethics has been emphasizing plant-based foods as an easy, effective, and healthy way to curb the country’s impact on the climate.</p>
<p>“We need to take action on both a personal and political level in order to address the serious issues of climate change,” says Red-Green Alliance’s environmental secretary, Maria Gjerding.</p>
<p>“Going vegan for 22 days is not going the save the world in itself, but it’s a great opportunity to put focus on Western consumption of animal products and the environmental and animal welfare problems it causes.”</p>
<p>Neighboring countries Netherlands, Sweden, and Germany all have updated dietary guidelines promoting more plants, and the German Ministry of Environment has banned meat from being served at official state events.</p>
<p>If the 22 days plant-based program sounds familiar, you may remember <a href="http://ecosalon.com/beyonces-grammy-performance-baby-blessing/">Beyoncé </a>did a similar challenge (and then went on to fund the 22 Days meal delivery program).</p>
<p>&#8220;Ditching animal products is a great way to fight climate change,&#8221; says Mercy for Animals&#8217; Joe Loria. &#8220;In fact, according to the U.N.’s Food and Agriculture Organization, carbon dioxide emissions from raising farmed animals make up about 15 percent of global human-induced emissions, with beef and milk production as the leading culprits.&#8221;</p>

<p><em>We’ve long speculated about the key to finding authentic happiness. </em></p>
<p>Denmark, along with other Northern European nations offer a wide range of social services. There’s seemingly little internal conflict, trust in government, little separation between the rich and the poor&#8211;while these are potential motivators of authentic happiness, what if it was more than that? What if happiness also came down to Danish DNA?</p>
<p>Scientists have uncovered genetic traits that may hold a clue as to why the Danes are so smiley all the time. Each year polls and surveys alike name Denmark among the happiest nations. And after looking at international surveys from 131 countries,  researchers are suggesting that genetics may play a role.</p><div id="inContentContiner"><!-- /4450967/ES-In-Content -->

<p>&#8220;The results were surprising, we found that the greater a nation&#8217;s genetic distance from Denmark, the lower the <a href="http://ecosalon.com/contentment-quote/">reported wellbeing</a> of that nation,&#8221; said Eugenio Proto, one of the researchers, in a news release, reported in <a href="http://www.scienceworldreport.com/articles/16100/20140718/danish-dna-key-happiness-why-denmark-happy.htm" target="_blank">World Science Report</a>. &#8220;Our research adjusts for many other influences including Gross Domestic Product, culture, religion and the strength of the welfare state and geography.&#8221;</p>
<p>Researchers looked at studies that suggested a link between <a href="http://ecosalon.com/31-quotes-on-peaceful-and-conscious-living/">authentic happiness</a> and a mutation of a gene that influences the reuptake of serotonin. Of 30 nations studied, Denmark and the Netherlands had the highest percentage of people with this variant gene.</p>
<p>&#8220;This study has used three kinds of evidence and, contrary to our own assumptions when we began the project, it seems there are reasons to believe that genetic patterns may help researchers to understand international well-being levels,&#8221; said Andrew Oswald, one of the researchers on <a href="http://www.scienceworldreport.com/articles/16100/20140718/danish-dna-key-happiness-why-denmark-happy.htm" target="_blank">World Science Report</a>. &#8220;More research in the area is now needed and economists and social scientists may need to pay greater heed to the role of genetic variation across national populations.&#8221;</p>

<p>The local street food of Nice, socca is a crepe made from garbanzo bean flour. While street food often makes its way around the world &#8211; you can get a döner kebab in just about any city &#8211;  socca is a little harder to track down. Even in Paris, <a href="http://ecosalon.com/foodie-underground-the-beauty-in-simplicity/">there&#8217;s only one guy making it</a>. Here are a few recommendations on <a href="http://www.davidlebovitz.com/2008/06/the-best-socca/">some of the best ones you can find in Nice</a>. Just make sure to get a chilled glass of rose while you&#8217;re at it.</p>
<p><strong>2. Pho: Hanoi, Vietnam</strong></p>
<p>Pho is one of those dishes that has made a name for itself outside of its homeland. In most food metropolises it&#8217;s easy to track down a few Vietnamese restaurants that top local foodies&#8217; list of recommended places. But pho is best consumed on a hot street corner in Hanoi, sitting on a small plastic chair and drinking a cold beer. Go all out on the dish of garnishes that is served with it: a bowl full of broth, cilantro and lime is a good thing.</p>

They&#8217;re all over Amsterdam, both sold in bags and packages at stores and markets as well as larger versions as street food. Hint: the day before you head home, go to the local grocery store and buy a few packages to take home with you. They&#8217;re that addictive.</p>

The word &#8220;accra&#8221; is most commonly used in the French-speaking part of the Caribbean, but you will also see them listed as fritters in the English-speaking parts. You&#8217;ll often find them served as street food and they make for a great snack.</p>

Such is the case with Pa amb tomaquet, the classic Catalan dish (pan con tomate in Spanish) that you&#8217;ll find in almost any tapas bar. The oilier and juicer the better. If a place does it well, you can be sure that the rest of their menu will be up to par.</p>

<p>Here’s a list of eight things that set our hearts a-flutter about Scandinavia this year.</p>

<p><strong>They know how to strike the perfect balance between indoors and outdoors. </strong><a href="http://ecosalon.com/places-spaces-juvet-landscape-hotel/" target="_blank">Rooms at the Juvet Landscape Hotel</a> nurture a relationship with nature, while remaining minimalist and sophisticated.</p>

<p><strong>They can pull off a girly microbrewery.</strong> The <a href="http://ecosalon.com/girl-meets-bar-clean-lines-instead-of-pickup-lines" target="_blank">Mikkeller pub</a> in Copenhagen underwent a feminine design transformation at the hands of Femmes Regionales. The result was delightful.</p>

<p><strong>They make rest stops not so scary.</strong> Norway’s government-sponsored a<a href="http://ecosalon.com/9-more-reasons-why-we-heart-scandinavia-249/" target="_blank"> National Tourist Routes program</a> engaging architects like Margrete Friis and Peter Zumthor to design lookouts, concession stands, restrooms, picnic tables, and other sustainable rest stops along scenic country roads.</p>

<p><strong>They champion post-secular worship and design.</strong> Helsinki’s <a href="http://ecosalon.com/an-almost-secular-approach-to-worship-design-in-finland/" target="_blank">Chapel of Silence</a> provides a place for urbanites to meditate in silence, without religious affiliation. It’s also gorgeous.</p>

<p><strong>They design treehouses that look like UFOs. </strong><a href="http://ecosalon.com/places-spaces-treehotel-sweden-eco-camp-hotel/" target="_blank">Sweden&#8217;s Treehotel</a> consists of five eco-hotel campsites designed by leading Scandinavian architects in the woods of northern Sweden.</p>
<p><a href="http://ecosalon.com/wp-content/uploads/ikea-carts.jpeg"><img class="alignnone size-full wp-image-106364" src="http://ecosalon.com/wp-content/uploads/ikea-carts.jpeg" alt="" width="455" height="303" srcset="https://storage.googleapis.com/wpesc/1/ikea-carts.jpeg 455w, https://storage.googleapis.com/wpesc/1/ikea-carts-300x199.jpg 300w" sizes="(max-width: 455px) 100vw, 455px" /></a></p>
<p><strong>They give their factory workers, even the fast furniture ones, five weeks of paid vacation per year. </strong>Workers at <a href="http://ecosalon.com/the-unvar-labur-system-at-ikea/" target="_blank">IKEA’s Sweden plant</a> also get paid $19 per hour, and the whole country offers free healthcare, elderly pensions, and a host of other social goodies. Compare that to workers in IKEA’s Danville, Virginia, plant, who get paid $8 an hour and are often forced to work overtime at the risk of being fired.</p>

<p><strong>They can look perfectly at home in a house with white floors.</strong> A <a href="http://ecosalon.com/tine-kjeldsen-home-tour/" target="_blank">peek inside designer Tine Kjeldsen’s home</a> in Denmark reveals the perfect combination of exposed wood, raw metal, plush plum upholstery, and flawless white floors.</p>

Activities and design at Southern Norway’s <a href="http://ecosalon.com/places-spaces-canvas-hotel/" target="_blank">eco-friendly Canvas Hotel</a> celebrate their motto: “You don’t stop playing because you get old, you get old because you stop playing.”</p>
