Take this delicious grilled fish recipe, for instance. In between layers of catfish, there are pieces of sweet onions and red, green and yellow bell peppers. The peppers complement the lightness of the fish and bring out their flavors.

Few easy dinner ideas are simpler or more delicious. With minimal effort, the catfish cooks quite quickly and the peppers don’t reach complete softness. If you prefer the peppers to be more thoroughly cooked you can place them on the grill for 5-10 minutes prior to cutting and skewering. This step gives them a head start to break down and reach a tenderness akin to the fish itself.

Spicy Grilled Fish Recipe with Bell Peppers

Serves 2-3

Ingredients:

• 2 servings (6-8 ounces) catfish, or other meaty varieties
• 1/4 teaspoon black pepper
• 1 medium red bell pepper
• 1 medium yellow bell pepper
• 1 medium green bell pepper
• 1 small white onion
• 1/2 teaspoon sweet paprika
• 1/4 teaspoon cumin powder
• 1/8 teaspoon cayenne
• 1/2 teaspoon sea salt
• 2 tablespoons olive oil
• 5 metal skewers, or wood skewers soaked in water

Directions: Cut the bell peppers into eights, tossing the stems and inner flesh and seeds. Cut the onion into same-sized pieces as the peppers. Cut the fish to make a total of 15 pieces.

Slide the peppers, onions and fish into the skewers, rotating the colors of the bell peppers. The peppers should also be the layers on the outermost ends.

Season both sides with the spices and brush both sides with olive oil. Place on a grill and close the lid. Cook for 5 minutes before turning. Cook for 2-3 minutes on the other side before serving. The peppers should be lightly charred and the fish cooked through.

Serve over plain or flavored rice. Enjoy!
