Gorgeous sprawling landscapes and mobile vegetable patches are two ways to show everyone that you have the greenest of green thumbs, but rooftop gardens are the cat’s meow when it comes to eco-friendly planting options.

Rooftop gardens are not only a gorgeous and elegant way to beautify your home, but they’re also perfect for apartment dwellers with limited space. Birds love top-floor landscaping, they make a great place to grow food, and are a sustainable way to insulate the building underneath.

Here are a few rooftop designs I fell in love with the minute I saw them.

Imagine sipping your morning coffee while enveloped in this rooftop retreat. The brainchild of NYC garden designer Amber Freda, it features cozy chairs, lush hedges, Zen-like trees and a skyline view. Let’s just agree to call this incredible, yes?

Even if you have a tiny rooftop, you can still think big. UK design firm BlueSky Landscapes created a sheltered cooking an dining area on this small terrace and still had room leftover for a sitting area and loads of planters of staggered heights to draw the eye upward. The bright orange table and matching benches add a bright pop of color we love.

I would climb buildings in Manhattan’s East Village to find this rooftop living space. In addition to skyward-growing vines and rows of greenery flanking beautiful wooden benches, this space has a custom-made stainless steel water basin and spout, and even a private shower area so you can bathe al fresco. Pulltab Design, I think I love you.

Chicago Specialty Gardens designed this jaw-dropping outdoor garden that mixes birch pole arrangements with bench seating, and ipê screening to allow for air movement during hot summer months. Potted plants and trees complete the look and you’d never know you were on a garage rooftop in the middle of the city.

Landscape designer Andy Sturgeon created a perfect look for rooftop gardens in arid climates where grass and thirsty plants won’t thrive. Planked paths and gravel landscaping provide a backdrop for long-leafed flowering plants and assorted shrubbery. The gorgeous fire pit is surrounded smooth, white boulders and a wooden seating arrangement perfect for enjoying a cup of tea while watching the sunset.

Money doesn’t grow on trees, but the excess fruit from a neighbor’s yard can make your diet richer and it won’t cost a dime. Shouldn’t we share the wealth?

That’s the thinking of Neighborhood Fruit, created by San Francisco urban farmers to reduce the tragic waste of fruit, which is forbidden in their vision of sustainability. Their website lets subscribers find and share fruit locally both in backyards and on public lands.

Since planting the seed in June, they’ve attracted between 3,000 and 5,000 visitors a month and located a total of 10,000 trees nationwide and growing.

Much of the fruit the nation consumes is grown in water-intensive orchards far from our homes and shipped at the high cost of fuel. Instead, co-founder Kaytea Petro sees a future where the bulk of seasonal backyard fruit is utilized and shared between neighbors for snacking, baking, putting up organic preserves, even setting up a lemonade stand – any good uses you might have for the bounty.

“I first thought of the idea when I lived on Bernal Hill and my neighbor had an apple tree with a lot of excess fruit that she would never share,” says Petro, who decided to refine the fruit network notion for her graduate thesis at the Presidio School of Management, where she received an MBA in sustainable business.

“We’re a nationwide tool that helps people connect locally,” says Petro. “The typical user is someone with a plum tree who knows what a pain it is when the fruit comes in because it all comes in at once. Those seeking the fruit are into making pies and jams or to show their city kids where food comes from.”

The mechanics of connecting are simple. I register my lemons and oranges and when the fruit arrives, I put out the word on the site. “Come and get it!” I decide if I want to pick it myself or have interested takers come over with their bushels to help pick what they want.

It seems to be attracting those who don’t want to go through the red tape of becoming a registered producer who sells at the farmers’ market, the only way to sell fruit legally.

“It can be a lot of paperwork,” observes Petro, who adds that 25% of her users are people with fruit trees. And for obvious reasons, those with trees in L.A., Miami and Austin see more of a year-round yield than those in Boston and Seattle.

In addition to making connections, Petro and co-founder, Oriana Sarac, manage a monthly newsletter, The Grapevine, featuring the voices of gardeners, bee keepers and other experts in the field, as well as a blog for sharing timely articles, recipes and success stories.

They call their neighbor fruit sharing network Fruitfillment. Anyone who believes in this vision for making use of our abundance knows the ripe concept is fulfilling a mission, indeed.

Organic, textural and highly ornamental, cabbage is an ideal crop to plant in your garden during those fall and winter months when falling leaves can be the only color abundant in the garden.

Planting rows of the cabbage was a great solution for my own raised veggie bed (below), which is very challenging to maintain this time of year. I long for pumpkins but we never seem to get them going in time.

A garden designer friend suggested the purple, low-water use option of the Cruciferea family (from the same family as cauliflower, broccoli, kale, collards and Brussels Sprouts) as a way to fill in the blank bed.

I love how they look, rather modern and clean as a design feature, plus, they actually like living in my San Francisco yard (not one has complained about the morning fog).

As a cool season crop with color that can be enhanced by cold weather, they can tolerate chillier temperatures of nearly 32 degrees, according to Vegetable Garden Suite 101. You can keep them as a lovely design feature, or cook them in a variety of dishes, from savory soups to simple steamed side dishes and  wonderful, healthy slaws.

Still, many prefer ornamental cabbage and kale as low water use plants rather than food, finding other members of the family of plants are much more tasty as food crops.

Apparently, the cabbage originated as a wild crop along the Mediterranean and Western Europe where it was used medicinally, and was one of the first Cruciferea crops to be domesticated some 2,000 years ago. Part of the popularity is the fact ornamental varieties need virtually no maintenance.

There are many sites for buying the flowering cabbage seeds, including Park Seed and  Neseed, or you can find them at a local nursery that deals in organic plants.

Park Seed recommends starting the seeds indoors and covering them very lightly before transplanting when the leaves begin to shoot.  The color evolves around 3 1/2 months from sowing to form a rosette of colorful leaves with cream rose, pink and purple shades, 10 inches high and 12 inches wide. As hungry workers nationwide kiss moral-boosting bonuses and office parties goodbye, at least one Minnesota employer is adding rather than subtracting a perk for his people: an organic vegetable garden for enjoying the fruits of their labor.

The Dude Ranch in Delano, Minn. (30 minutes outside downtown Minneapolis) is the brainchild of Fred and Sarah Haberman, Co-Founders of Haberman Public Relations. Based on a community-supported agriculture (CSA) model, the plot is a working garden that has replaced the water cooler as the employee gathering place. But instead of spreading gossip, salaried locavores are spreading seeds, hoeing, raking and fertilizing fresh tomatoes, onions, potatoes, peppers, peas, green beans, herbs, broccoli, cabbage and beets.

“At the end of the day, it’s an experiment but one that is reaping incredible rewards,” a passionate Haberman tells me. “People are coming out to the farm, relaxing, learning where their food comes from and what it looks like when it is in the earth.”

Among the staff nurturing greener pastures are urban apartment dwellers in downtown Minneapolis who have never done any gardening or spent time in the country. This includes public relations executives representing Haberman clients like Organic Valley, Annie’s Homegrown, Country Choice Organics, NCGA (National Coop Grocers Assoc), and the Organic Trade Association, to name a sustainable few.

“It’s our mission to tell the stories of food pioneers in the organic and sustainable agriculture realm and working the garden lets us learn as much as possible about what our clients go through as they grow food so we can walk our talk, so to speak,” says Haberman.

That talk naturally includes corporate speak, such as “team-building opportunities” and “economic incentives” which are motivators for Haberman in landing this back-to-nature account for his underlings.

In terms of the big picture, he’d  like to inspire other businesses to adopt his farm model and replace health care memberships and other perks with a field of dreamy crops. Hey, if the White House can do it, why not Pepsi?

“The idea of creating a movement, getting other companies to adopt this new employee benefit really excited me because so many good things happen,” he says. ” You create an opportunity for people to buy foods without pesticides; you get families meeting each other in a calm rural setting; and allow more conscious food choices.”

Haberman staffers, aided by a few experienced gardeners, will spend the summer and fall planting, tending and harvesting their own produce. Minneapolis is known for its big chills and strong weather patterns, and Haberman says he and the staff have been learning more about how that effects the crops as they play farmer on days off.

“The ground in the beginning of this year was so dry it was like concrete, three inches below the surface,” Haberman remembers. “Today it rained and all I could think was ‘thank God!’ You open your eyes and snap out of your urban bubble and understand what small farmers are going through. Their income is largely based upon the weather.”

But what if it turns out to be like Green Acres and the city folks decide to leave their concrete jungle for the rural paradise?

“I guess we’ll just have to change our business model,” jokes Haberman, who adds he many workers are now heading out to the garden without his directing the activities. “I put something in motion and it’s exciting as it takes hold.”

Meantime, the company is planning its first Dude Stock at the ranch this fall, a party to celebrate the harvest. Haberman put the concept on the web and the community is responding enthusiastically, including a chef from the organic restaurant, Corner Table, who has offered to come cook at the event.

“A lot of us are cooking what we are growing, but this guy is head and shoulders above the rest.”
