Avocados are my favorite fat source. These little guys may look like grenades on the outside, but their green meat is to die for. Since avocados popularity will only increase as more people become aware of their tasty awesomeness, we’ve rounded up the following recipes to help you keep your avocado toast dishes diverse.

1. For a hearty lunch: Quinoa, Chickpeas, and Avocado on toast, from The Chalkboard

We all know that avocados pair well with turkey, but that news does nothing for our vegetarian readers. Veggie heads can get a midday protein kick by piling quinoa and chickpeas (along with avocado) on some toasted bread. This combo is scrumptious and provides a ton of minerals, too.

While this concoction’s creator doesn’t suggest serving The Vegan Delight as a party snack, I think it’s worthy for that lofty designation. This avocado toast recipe calls for hummus, avocado, slow-roasted tomatoes, hemp hearts, pepper, and sea salt. Cut the toast slices in half and serve as a unique appetizer.

3. For a lazy, weekend brunch: Eggs and Sriracha Avocado Toast, from Organic Authority

The best homemade brunches are the easy-to-make homemade brunches. That’s why we love OA’s simple Sriracha and Eggs avocado toast recipe. Follow these simple directions for a great brunch. (And don’t forget to make some mimosas.):

“Assemble 2 eggs, sriracha, sea salt and pepper. Place a non-stick frying pan over medium-low heat. Crack the eggs into a pan over medium-high heat, season with salt and pepper and cover. Cook until the whites are cooked through and yolk is still runny. Place the eggs on top of each slice of toast. Drizzle each egg with Sriracha to taste. Season with salt and pepper and serve.”
