<p><em>Would you pay 42 cents for this 1977 version of egg nests?</em></p>
<p>A 42 cent lunch would be nice! However, I’m not quite sure I’d even fork over that amount, measly it may be, for the above egg nest featured in a March 1977 publication of <em>Homemakers. </em>From the looks of the recipe, there’s nothing in the dish but the elements to a satisfying breakfast! The picture is what gets me. The egg yolk looks raw and the egg white puff looks like some sort of mold overgrowth – not the best thing to imagine on a sensitive morning stomach.</p>
<p>My modern adaptation of an egg nest breakfast uses similar ingredients to those in this retro recipe, but the result looks a lot less worse for wear. I use the egg whites to coat the bread and seal in the moisture, form a nest for the egg yolk, and then give the dish a hint of sweetness with honey and a touch of light earthiness with the fresh mint.</p><div id="inContentContiner"><!-- /4450967/ES-In-Content -->

<p><strong>French Toast Egg Nests</strong></p>
<p><em>Serves 2</em></p>

<p><strong>Ingredients:</strong></p>

<li>2 eggs</li>
<li>1 tablespoon milk or cream</li>
<li>Dash of sea salt</li>
<li>Dash of black pepper</li>
<li>2 slices of a thick, fluffy bread</li>
<li>1/2 teaspoon butter</li>
<li>1 tablespoon honey</li>
<li>A few mint leaves for garnish</li>
</ul>
<p><strong>Directions:</strong></p>
<p>Separate the egg white from the egg yolk. Reserve the egg yolks for later, keeping them whole.</p>

<p>In a small bowl that has the width (or greater) of the length of the bread slices, whisk together the egg whites, cream, salt, and pepper.</p>

<p>Over medium-low heat, melt the butter. Soak both sides of each piece of bread in the egg white mixture so that both faces’ areas are covered, and place in the saucepan.</p>

<p>Let the bread sit over the head for 1 minute, or until slightly browned, before flipping. Once you rotate the bread, delicately pull apart the center of each slice to create a small nest. Fill each nest with the reserved whole egg yolks, one for each bread.</p>

<p>Pour any remaining egg white mixture in the nests as well, equally distributing it among the two. Don’t worry about the egg whites leaking outside of the nests. Embrace the rustic look!</p>

<p>Immediately transfer the entire saucepan into the oven. Broil on high until the egg yolk cooks to your liking – approximately 2 minutes.</p>

But despite its popularity in numbers – more than 362 billion Oreos have been sold since 1912 – the cookie isn’t winning friends among health enthusiasts.</p>
<p>The first listed ingredient in Oreos is sugar. Other offenders include enriched flour, high-fructose corn syrup and artificial flavoring. One serving of Oreos equates to three cookies, which together contain 7 grams of fat, 2 of which are saturated, 25 grams of carbohydrates, 1 gram of fiber, 14 grams of sugar, 1 gram of protein, 160 milligrams of sodium, and traces of calcium and iron.</p><div id="inContentContiner"><!-- /4450967/ES-In-Content -->

<p>Overall, the cookie is devoid of any significant nutrition and packed with empty calories and low-quality carbohydrates that only spike blood-sugar levels rather than add digestion-friendly fiber. The solution is to get as simple and pure as possible. The following recipe is an almost-raw, vegan version of Oreos, without the sugar and flour. Coconut butter is a rich and decadent alternative to the vanilla crème, while a walnut and date mixture become the ultimate power couple for the discs. The result is a denser, more satisfying treat that fills you up with enzymes, nutrients, and taste!</p>
<p>Pair with a glass of warm vanilla almond milk if you’re feeling the occasion!</p>
<p><strong>Vegan Oreo Cookies</strong></p>
<p><em>Makes 10-15 cookies</em></p>
<p><strong>Ingredients</strong>:</p>
<p><em>For the chocolate wafers</em></p>
<ul>
<li>1 cup walnuts</li>
<li>8 Medjool dates, pitted</li>
<li>1 tablespoon of cocoa powder</li>
<li>Dash of sea salt</li>
<li>1/2 teaspoon of vanilla extract</li>
</ul>

<li>1/2 cup coconut butter</li>
</ul>
<p><strong>Directions:</strong></p>
<p>For the filling, process all ingredients until the mixture forms a ball.</p>

Three hours later, we seemed to float from our seats, back to our businesses and filled with the joys of good friends and good food. <p><span style="text-decoration: underline;">An adventurer’s note:</span><br />
Making this seasonal treat vegan is like diving into a science lab—but local, fresh and organic. Lucky for you, I’ve conducted all the in-kitchen experiments, so all you need to do is follow along. The most fun and challenging part, you may find, is to create a vegan version of heavy whipping cream. I started with a <a title="Fig &amp; Coconut Walnut Cake" href="http://ecosalon.com/sunday-recipe-fig-and-coconut-walnut-cake/" target="_blank">coconut</a>-based creamer, and then blended in prepared (dissolved, cooled and gelatinized) agar-agar—a red algae based thickening agent. Not only does it give just the right texture, thickness and creaminess to the mix, it’s also <a title="agar-agar" href="http://www.livestrong.com/article/320030-agar-diet/" target="_blank">reported</a> to provide a healthy dose of minerals and fiber, all the while suppressing the appetite. With those benefits to boot, it&#8217;s the perfect complement to a beach time sweet treat.</p>

<p><strong>The Original – Strawberry Shortcake</strong><br />
from <a title="Martha Stewart Strawberry Shortcake recipe" href="http://www.marthastewart.com/336107/strawberry-shortcake" target="_blank">Martha Stewart</a></p>
<p><span style="text-decoration: underline;"><strong>Ingredients</strong></span></p>
<p>• 1 ¾ pounds (6 cups) strawberries—rinsed, hulled and quartered<br />
• 1 ¼ cups + 2 tablespoons sugar<br />
• 3 cups all purpose flour<br />
• 4 teaspoons baking powder<br />
• 3/4 teaspoon salt<br />
• 12 tablespoons cold (1 ½ sticks) unsalted butter, cut into small pieces<br />
• 2 cups heavy cream<br />
• 2 large eggs<br />
• ½ teaspoon vanilla extract</p>
<p><strong>The Vegan &amp; Gluten-Free Version – Strawberry Shortcake</strong><br />
<em>Makes approximately 6-8 shortcakes</em></p>
<p><span style="text-decoration: underline;"><strong>Ingredients</strong></span></p>
<p>• 1 ¾ pounds (6 cups) strawberries—rinsed, hulled and quartered (For the fullest flavor, I recommend using local and fresh strawberries.)<br />
• 1 ¼ cups + 2 tablespoons sugar<br />
• 3 cups gluten free flour blend:<br />
• (1 cup sorghum flour)<br />
• (1 cup white rice flour)<br />
• (1/2 cup garbanzo bean flour)<br />
• (1/2 cup potato starch flour, minus 2 tablespoons)<br />
• (2 tablespoons almond flour)<br />
• 4 teaspoons baking powder<br />
• 3/4 teaspoon salt<br />
• 12 tablespoons cold (1 ½ sticks) unsalted vegan butter, cut into small pieces (I used Earth Balance coconut butter)<br />
• 2 cups coconut cream (I used So Delicious coconut creamer, blended with approximately 3 tablespoons of dissolved agar-agar to thicken)<br />
• 2 egg substitutes (I blended 2 tablespoon ground flax seeds with 6 tablespoons warm water)<br />
• ½ teaspoon vanilla extract</p>
<p><span style="text-decoration: underline;"><strong>Directions</strong></span></p>
<p>1. Preheat oven to 375°F<br />
2. In a medium bowl, toss the prepared strawberries with ¾ cup sugar. (I suggest starting with ½ cup and tasting to see if more sweetness is needed.) Let sit to bring out the juices.<br />
3. In a food processor, pulse together your gluten free flour blend. Add the baking powder, ½ cup sugar and the salt, and pulse until combined. Add the cold butter, and pulse until the mixture resembles course meal with some pea size bits of butter remaining (pulse approximately 10-12 times).<br />
4. In a medium bowl, whisk together ½ cream (before the agar agar has been added to thicken) and the egg substitute. Pour over the flour mixture, and pulse until some large clumps begin to form (pulse approximately 20-30 times).<br />
5. Using a half-cup measuring cup, gently pack dough into the cup, invert and tap out on to a lightly buttered or parchment lined baking sheet. Repeat to form 6-8 biscuits.<br />
6. Bake until golden brown, about 20 minutes. Transfer to a rack to cool for at least 15 minutes.<br />
7. Beat the remaining 1 ½ cups cream, with the prepared agar-agar mixture, 2 tablespoons sugar and vanilla until smooth and creamy (Note, this will not form peaks like a traditional heavy whipping cream, however, I assure you the taste and texture will not leave you craving cream.)<br />
8. Slice the biscuits horizontally with a serrated knife. Spoon the strawberries and their liquid over the bottom of each biscuit just before serving. Spoon your whipped cream over the strawberries, and top with the other biscuit half.</p>

I have a medium skin color and some of the bronzers I&#8217;ve used seem like they don’t show up at all, others are too orangey and streaky.  Is it best to use a matte, cream or powder.  I’m confused. Please help!&#8221;</em></strong></p><div id="inContentContiner"><!-- /4450967/ES-In-Content -->

<p>Jessica, this is definitely not the first time I’ve heard confused over choosing bronzer. Let’s start with texture. Cream bronzer melts into the skin, appearing to give you a glow from within, and can easily be applied with either fingers or a brush.  It’s great for keeping a hydrated, dewy look on the face, but if it’s nearing triple digits, I’d set it with a powder to make sure it doesn’t slip away.</p>
<p>Nearly every makeup line has a powdered bronzer, so that can make it even more confusing to decide which one to choose. These bronzers glide on effortlessly with a brush and have more staying power through hot and humid weather than creams. Depending on how matte the finish, they can also offer a dewy look.  Be careful because they don’t always blend easily and you don’t want to look streaky or overly powdered up.</p>
<p><strong>The Sparkle Factor</strong></p>
<p>The majority of bronzers have some shimmer in them because consumers love their sparkle, even if it’s not always the most flattering look on their faces. Often on photo shoots, I start with a matte bronzer and build in the amount of shimmer over it that feels right for the face I’m working on and the overall makeup look we are going for. More shimmer can be a lot of fun for a candlelit summer soiree, but for a more natural look, like at the workplace, keep the sparkle factor to a minimum.</p>
<p>Truly matte bronzers are few and far between, so if that’s what you are going for, use a foundation about 2-3 shades darker than your skin tone.  The above photo is an example of how I used a warmer, darker foundation shade on this model to create a tanned and sculpted cheekbone.  There’s dewiness to the skin, but it doesn’t come from using shimmer.</p>
<p><strong>Not Faking It</strong></p>
<p>The hue of bronze is where it can get trickier, because “tan” for one person could be a totally different type of shade for another and the goal is having that color look realistic. There are two extremes you never want to touch: a shade that is so orange that it looks as if you are cousins with an ompah loompah and a shade that is so cool and muddy that you looked as if you got some dirt on your face.</p>
<p>You said you have a medium skin tone, and now the question is do you have more golden, olive, or pink undertones? That will help determine the hue of bronzer to use. The best way to see which shade complements you best is to compare swatches of the color on your forearm side by side.  Usually that area is more tan than the face and there you’ll be able to see very clearly which bronzer comes closest to the shade of your natural tan.</p>
