Green inside and out, the Birdbath Bakery is the creation of Maury Rubin of City Bakery fame. Already known to bake with organic ingredients, Rubin decided to create a wholly eco-friendly environment in which to sell the baked treats.
As a result, the walls of Birdbath Bakery are made from wheat and sunflower seeds and the floor features reclaimed wood. The paint is milk-based and gets its coloring from beets. And the counter is made of bamboo. But it’s not just the building that’s green. The staff wear custom hemp and linen jackets. The cups are made of biodegradable corn. The paper bags are wax free.
And all the baking is done at the East Village Bakery. Whatever is required at the West Village Bakery is delivered by bicycle-driven cargo rickshaws. And to encourage the people-powered transport theme, the bakery grants a 25% discount if you arrive by bike or skateboard!
