Valentine’s Day Recipe: Vegan Strawberry Mousse

Valentine’s day is about sensuality, and it takes a fitting dessert to match the love in the air. This recipe for a vegan strawberry mousse is anything but lacking.

It is full of healthy fats from coconut milk and sweetness from fresh strawberries. The result is a sensuous red mousse that is as festive as it is body-friendly. Spoon feed your lover (or you and your single friends) this healthy dessert, which will keep them looking fit and fabulous on Valentine’s Day and beyond.

One way to impress your valentine is to prepare him or her a meal, finished off with the most important part: dessert. This strawberry mousse recipe only requires 3 ingredients and 3 minutes. That’s it. You can replace the strawberries with any other berry, but for the sake of Valentine’s Day, keep it pink! I like to garnish the resulting dish with slivers of fresh strawberries and minute, but you can also shave bitter chocolate, coconut flakes or chopped nuts atop it. Enjoy!

Vegan Strawberry Mousse Recipe

Serves 2

Ingredients

  • 2 handfuls strawberries, stemmed
  • 1 can (14 ounces) BPA-free coconut milk, chilled in the refrigerator overnight
  • 1 tablespoon maple syrup
  • Slivers of fresh strawberries and fresh mint for garnish (optional)

Directions

Scoop out the thickened part of the coconut milk into a food processor and throw out the liquid. Add the strawberries and maple syrup. Pulse until well combined – don’t overdo it. Once evenly mixed, pour into 2 serving ice cream bowls or cups and place into the refrigerator so the mixture can thicken a bit more. Serve with a garnish of slivers of fresh strawberries and fresh mint. Enjoy!
