Old Fashioned with a Modern Twist

Cue classic Hollywood noir film: the leading man makes a cocktail for his femme fatale, fizzes the water in a seltzer bottle, then luxuriously exhales a curling plume of cigarette smoke. What were we thinking with all that smoking - and what happened to those seltzer bottles?

These days, we buy our fizzy water at the market. Some plastic, some glass, but whatever the material, that's a lot of waste. As with smoking, soon I think we're going to be asking ourselves: "What we were thinking buying all those disposable water bottles?"

Living in a country that has clean, safe water flowing from the taps means that there isn't really a good reason to be wasting money and global resources on bottled water. But plenty of people, myself included, enjoy that fizz. Isn't there a better way?

I started looking around for some at-home options:

Here's a handy little appliance that takes up less space on your counter tops than a toaster oven. A starter kit runs less than $100 so it will quickly pay for itself.

Here's a slightly cheaper, simpler version
that uses CO2 chargers.

Or, if you're a scrappy DIY type, make your own with a CO2 tank, a regulator and some hose.

Here's to you, kid.
