Vegan Raw Chewy Brownie Recipe with Fresh Mint

This recipe for Vegan Raw Chewy Mint Brownies from Curtis and Candace is worth the effort. Each ingredient is raw, unprocessed, and downright healthy, so you don’t have to worry about what the end product will do to your waist line.

Vegan Raw Chewy Mint Brownie Recipe

For the Brownies
2 cups raw cashews
3/4 cup cacao powder
1 cup pitted Medjool dates
1/3 cup coconut nectar
A small bunch of mint (leaves only)
1 tsp peppermint oil/extract
Pinch of Himalayan Pink Crystal salt

For the Frosting
2 ripe avocados
1/4 cup cacao powder
1/2 cup raw honey
1/4 cup coconut oil
2 Tbsp vanilla extract
Pinch of Himalayan Pink Crystal salt

Method

1. Add the cashews and cacao powder to a food processor and combine. Add in dates, honey, mint, peppermint extract, and salt. Combine until a dough forms.

2. Add parchment paper to the bottom of a loaf pan and evenly distribute the brownie along the bottom of the pan.

3. For the frosting, add avocado, cacao powder, coconut nectar, oil, vanilla extract, and salt to a food processor. Blend on high speed until smooth. Spread evenly on brownies.

4. Refrigerate to let set for a few hours and cut into one inch squares.
